HAWAIIAN MOLDED CUCUMBER SALAD 
1 (8 oz.) can crushed pineapple, drained
1 c. chopped cucumber
1/2 c. diced grapefruit
2 tsp. grated onion
1 sm. pkg. lemon gelatin
3 tbsp. mild vinegar
1 tbsp. sugar

Prepare gelatin according to package directions using juice from pineapple and vinegar as part of liquid called for on package. When gelatin is partially set, fold in the cucumber, pineapple, and grapefruit. Turn into mold which has been rinsed with cold water. Chill until firm. Serve on piece of lettuce with some mayonnaise on the side.
