BAKED BEANS 
2 c. Great Northern Beans
Water to more than cover
1/2 tsp. baking soda
1 1/2 qts. water

SAUCE:

1/3 c. brown sugar
1 tsp. salt
1 tsp. dry mustard
4-5 tbsp. maple syrup
2-3 tsp. butter
About 1/4 c. catsup
2 c. saved liquid

Top with 1 pound Virginia cured thick bacon.

Soak dry beans overnight in lots of water. Bring to boil with 1/2 teaspoon baking soda. Don't cook. Drain and rinse. Throw out very hard beans. Bring to boil again in 1 1/2 quarts water. Simmer 1 hour. Drain, saving 2 cups liquid.

Put beans in 9x12 baking pan. Pour sauce over beans. Cover with 1 pound thick bacon. Bake at 300 degrees for 3-5 hours. Watch time.
