SCALLOPED POTATOES 
2 lb. bag frozen cubed hash browns (partially thawed)
6 tbsp. butter, melted
1/2 c. chopped onions
1/2 tsp. salt
1/4 tsp. pepper
1 pt. sour ream
1 can cream of chicken soup (can substitute cream of mushroom or celery)
1 c. grated Cheddar cheese
Dry bread crumbs

Pour potatoes in ungreased 9x13 inch pan. Mix next 6 ingredients together. Pour over potatoes. Bake 350 degrees 1 hour. Sprinkle with cheese and bread crumbs. Bake 15 minutes longer.

To make this heartier, I add cooked sausage or hamburger and vegetables (i.e. broccoli, cauliflower, peas - whatever is on hand).
