RAISIN BRAN MUFFINS 
1 1/4 c. regular all purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/3 c. sugar
1 1/2 c. raisin bran cereal
1 c. milk
1 egg
1/4 c. vegetable oil or soft shortening

Stir together flour, baking powder, salt and sugar. Set aside. Measure raisin bran and milk into mixing bowl. Stir until combined. Let stand 1 to 2 minutes or until cereal is softened. Add egg and oil; beat well. Add dry ingredients to cereal mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2" muffin pan cups. Bake in oven at 400 degrees for about 25 minutes or until the muffins are golden brown. Serve hot. Yield: 12 muffins.

Variations:

1. Add finely chopped apple to muffin mixture (about 1 cup) and an additional egg.

2. Combine 2 tablespoons sugar, 1 teaspoon cinnamon and 1/4 cup chopped pecans. Sprinkle about 1 1/2 teaspoons mixture on top of each muffin before baking.
