SOUTHWEST SALAD SANS FAT 
Fresh vegetable of choice, e.g.
Lettuce
Tomato
Onion
Carrots
Z ucchini
1 c. Black beans (if canned, drain)
1 c. Low-fat Mozzarella cheese
1/2 c. Salsa (commercial or homemade)

Mix together vegetables. Add beans. Top with cheese and salsa.

Other options: beef or turkey
