LOW CAL BAKED APPLES WITH
RAISINS
 
4 lg. baking apples
2 tbsp. raisins
1 tbsp. brown sugar
1/4 c. unsweetened apple juice
1 tbsp. butter
Cinnamon
Nutmeg

Core apples. Remove a strip of peel from the top of each apple. Cut a slice off the bottom of each apple so it sits flat. Toss raisins with a large pinch of each cinnamon and nutmeg. Fill each apple with some spiced raisins and put in a microwave safe dish with the apple juice. Cover with microwave-safe plastic and vent one side.

Microwave on high until tender, turning dish halfway through cooking time, 8 to 10 minutes. Remove apples from dish and keep warm. Add butter, sugar, and 1/8 teaspoon cinnamon to pan juices. Microwave on high until butter has melted, sugar dissolved and mixture is slightly thickened, 1 to 2 minutes. Serve apples with sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.
