“PINEAPPLE BANANA CAKE” IS IN:

PINEAPPLE BANANA CAKE 
3 cups flour
2 cups sugar
3 eggs
1 1/2 cups vegetable oil
1 cup crushed pistachios, Macadamia, or walnuts
1 tsp. baking soda
1 tsp. salt
1 (8 oz) can crushed pineapple
1 tsp. cinnamon
1 tsp. pure vanilla
2 cups mashed bananas

Preheat oven to 350°F. Grease a tube or Bundt pan or spray well with non-stick spray. Dust lightly with flour, tapping out excess.

In a large bowl, whisk together dry ingredients (flour, sugar, baking soda, salt, cinnamon) until no streaks remain.

Make a well in the center and add eggs, pineapple, nuts, oil, vanilla and bananas.

Stir batter (do not beat), mixing well. Some lumps can remain in batter; do not overmix.

Bake cake in a preheated 350°F oven until a toothpick inserted in center comes out clean (about 75 minutes).

Cool on wire rack for 5 minutes before removing cake from pan.

I made this with the kids I nanny for. We altered it a bit cuz one of the children was allergic to nuts, so we used shredded, unsweetened coconut instead. We also used a 14 oz. can of crushed pineapple and baked it in cup cake pans for 20 minutes. We yielded about 18 cupcakes. It turned out wonderful and golden. We will most definitely repeat this recipe. Its fun and delish. We changed the name also to 'pina-colada muffs' :) Happy baking!

Loved it and so did everyone who tried it! I used a bigger can of pineapple and instead of 2 cups white sugar used 1 cup golden brown sugar and 1 cup dark brown sugar (that was all I had in the pantry). It was DELICIOUS!

Another substitute for the nuts can you crushed unsalted pretzels or you can use Grapenuts cereal.
