1 egg
1 cup sugar
1/2 teaspoon grated lemon rind
1 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup milk
1/4 cup melted butter
3 cups peeled, cored, thinly sliced apples
1 tablespoon lemon juice
1 teaspoon cinnamon (optional)
Dash nutmeg (optional)
1 cup sour cream or heavy cream, plain or whipped (optional)

Beat the egg while gradually adding 1/2 of the sugar. Add lemon rind and vanilla.

Whisk together flour, baking powder and salt. Add to egg mixture alternately with the milk. Add the melted butter and pour into a buttered and floured 9-inch square cake pan, spreading evenly.

Sprinkle the sliced apples with lemon juice, arranging on top of batter. Sprinkle the top with the rest of the sugar, and the cinnamon and nutmeg.

Bake in a 350F oven for 1 hour and 10 minutes, or until cake is golden brown and pulls away from the sides of the pan. Cool in the pan for 20 minutes. Serve warm with cream, if desired.
