STIR-FRIED BEEF AND BROCCOLI 
BEEF:

3/4 lb. boneless sirloin (cut across the grain into 1/4-inch thick slices)
2 tsp. soy sauce
1/4 tsp. sugar
1/4 tsp. salt

In a small bowl, stir together soy sauce, sugar, salt, add the beef and let it marinate for 20 minutes. Set aside.

SAUCE:

1 tbsp. cornstarch
1 tbsp. soy sauce
1 tbsp. med. dry sherry or scotch
1/4 cup chicken or beef broth or water
1 tsp. sugar
2 tsp. sesame oil

While the beef is marinating: In a small bowl, dissolve cornstarch in soy sauce and stir in sherry. Add broth, sugar and sesame oil. Set aside.

STIR-FRY:

3 tbsp. vegetable or peanut oil
1 tbsp. minced peeled fresh ginger root
1 tbsp. minced garlic
1 (4-inch) fresh red chili, seeded and minced (wear rubber gloves)
1/2 tsp. dried hot red pepper flakes
1 lb. broccoli, cut into flowerets and stems peeled and cut into 1/2 inch thick sticks

Put oil in stir fry pan or wok, add ginger root, garlic, fresh red chili and broccoli. Finally add marinated beef and cook until meat is ready. Stir in sauce before serving.

Serve over cooked rice or noodles.

I stir fry with Elk all the time. I usually use left over roast that has been slow cooked as there is not enough fat in the Elk meat to keep it from getting tough at high temperatures. You might want to cook it by itself first on low heat, take it out when done, cook veggies on high and then add the elk back in at last minute. I am sure it will be wonderful!

Great recipe but it does not say when to add the sauce... I did it after the meat and it tasted great.

It's Christmas evening... I just finished the dishes... Thanks to my husband for harvesting a tasty tender elk.... Who needs turkey, ham or prime rib on Christmas? I made this delicious dish and substituted elk for the beef. I sliced up 2 elk sirloin steaks and wala :) It was delicious, and some leftovers for tomorrow's lunch :)
