TOMATO, BASIL, MOZZARELLA 
4 slices Semolina or Italian bread
1 to 2 tbsp. extra virgin olive oil
16 to 20 basil leaves
8 thin slices fresh Mozzarella
12 thin slices plum tomato

Drizzle bread with oil. cover each slice with basil, then top with Mozzarella and tomatoes. Serve open faced.
