EASY CHESS PIE 
1 stick butter
2 c. sugar
1 tsp. vanilla
4 eggs
1 tbsp. corn meal
1/4 c. evaporated milk
1 tbsp. vinegar
1 (9-inch) unbaked pie shell

Heat over to 425°F. Cream softened butter and sugar. Add vanilla. Beat one egg in at a time with a fork, but do not over beat. Add meal, milk, and vinegar. Stir until mixed in well, but do not beat hard. Pour into unbaked pie shell.

Bake at 425°F for 10 minutes. Reduce heat to 300°F and continue baking for 40-45 minutes.

Serves 8.
