CARROT CAKE WITH PINEAPPLE 
2 c. plain flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. cooking oil
4 eggs
2 c. sugar
2 c. grated carrots
1 c. chopped nuts
1 sm. can crushed pineapple

Sift all dry ingredients together and set aside. Mix oil, sugar, and eggs beating after each addition. Add dry ingredients, mix well, add carrots, pineapple and nuts. Grease and flour three 9-inch cake pans. Bake at 325 degrees for 30 to 35 minutes.

ICING:

1 (8 oz.) cream cheese (soft)
1 stick butter (soft)
1 box powdered sugar
2 tsp. vanilla

Beat all ingredients well and spread on cake.
