ONION - NOODLE KUGEL 
3-5 med. onions, sliced in thin crescent shaped slices
1 lb. fine noodles
5 eggs
1/4 c. olive oil
2 tsp. salt
1/2 tsp. pepper
1 1/2 tsp. sugar

Saute onions in olive oil until brown but not burned. Cook noodles and drain. Crack eggs (discarding yolks if you're watching cholesterol) in large bowl. Stir in onions, noodles, salt, pepper and sugar. (Adjust salt, pepper and sugar to taste.) Pour into 10 x 10 inch square or comparably sized dish. Bake covered for about 1 hour at 350 degrees. Uncover toward end if you like a crispy top.
