QUICK APPLE BETTY | |
5 lg. (5 c.) sliced tart cooking apples 1/2 c. water 1/3 c. brown sugar 1/2 tsp. salt 1/2 tsp. ground nutmeg 1 tbsp. fresh lemon juice 1/4 c. butter 1 1/2 c. bread crumbs 1/2 tsp. grated lemon rind 1/4 c. sugar Pare and slice apples about 1/8 inch thick. Cook with water, sugar and salt in a covered saucepan until just tender, but not until they lose their shape. Place half of the apples in a buttered 1-quart casserole dish. Sprinkle with nutmeg and lemon juice. Melt butter and mix with remaining ingredients. Sprinkle half of the crumb mixture over apples in casserole dish. Top with remaining apples and crumbs. Bake in a preheated oven at 425 degrees for 30 minutes or until crumbs are brown. Serve plain. |
