SHRIMP AND ORZO SALAD 
1 c. Orzo (rice shaped pasta)
1 lb. small shrimp, cooked
1 red pepper, julienned
1 c. fresh pea pods, julienned or 1 pkg. frozen pea pods, thawed and left whole
1/2 c. green onions, sliced
1/4 c. rice vinegar
1 tbsp. dijon mustard
1 tsp. sugar
1/2 tsp. red pepper flakes
1/4 c. peanut or vegetable oil
1/4 c. sesame oil
Salt
Shredded lettuce
Sesame seeds

Cook orzo as directed until just tender, about 8 minutes. Drain. Add shrimp, red pepper, pea pods, and onions. Chill. Whisk vinegar with mustard, sugar and red pepper flakes. Whisk in both oils. Season to taste with salt.

Pour dressing over chilled orzo mixture and toss to blend. Serve on top of lettuce and sprinkle with sesame seeds. 8 servings.
