TABOULE' 
2 c. dry cracked wheat
1 c. lemon juice
1 c. olive oil
2 bunches fresh parsley
2 chopped red Spanish onions
4 chopped tomatoes
1 chopped cucumber
Salt & pepper
Mint leaves

Soak wheat in lemon juice and olive oil for 2-3 hours. Chop parsley, very fine. Then add all ingredients. Chill several hours. Serve with lamb or any Mediterranean dish.
