MY FAVORITE FRESH APPLE BUNDT
CAKE
 
1 1/2 c. salad oil
1 c. sugar
1 c. brown sugar
3 eggs
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
2 tsp. vanilla
1 c. chopped pecans
4 c. chopped apples

Mix oil, sugar, eggs, well with vanilla. Sift flour, salt, baking soda, cinnamon and nutmeg - gradually add to egg mixture. Stir in nuts and apples. Pour into greased or sprayed Bundt pan.

Bake at 350°F approximately 1 hour (or test with toothpick). Very moist - remove carefully.

Frosting (optional):

1/4 c. butter
1/2 c. brown sugar
2 tbsp. milk

Bring to boil in saucepan 2-3 minutes.

Little powdered sugar to thicken

Cool; then drizzle over cake.

What a delicious, moist, spicy apple cake. I used walnuts instead of pecans and added 1 tbsp powdered sugar to the glaze after it cooled a bit. Served this for my Bible study group and we really loved it. Thank you for a wonderful recipe.

This recipe was simple and easy to follow. The cake is very moist and delicious. I did find out, though, that it takes quite a while for the cake to cool enough for you to cover it.

This apple cake was perfect. Made it exactly according to the recipe using Fuji apples which I cut into medium sized chunks. Going to give it as Christmas presents. Has anyone tried splitting the recipe and putting it into loaf pans? Wondering how long you would bake it then. YUM!

This has become my go-to coffee cake, especially during fresh apple season. It's wonderful with Granny Smith, Mutsu, Arkansas Black, Jonigold, or any type apple. I made this cake recently for a community bake sale, and it was one of the first two sold. I don't change a single thing and go strictly by the instructions. I advise the baker not to peel your apples. The cake is so tender and moist, you can take advantage of the nutrients in the apple skin. Do note that the batter cannot be poured into the pan. I just use my wooden stirring spoon and plop it evenly around the cake pan. One of the best things about this recipe besides its deliciousness is that you don't need to get out your mixer. Just use a good wooden spoon or batter bread stirrer. Thank you so much for this terrific recipe.

Absolutely the best apple cake! I've baked it TWICE in one week, as everyone wants a slice. Moist, full of cinnamon and yummy! I reduced the baking time to 50 minutes in my convection oven and x2 cinnamon. Substituted Allspice instead of cloves.

I used sad, wormy apples that I had to trim up and peel. Followed the recipe exactly first time (reduced heat to 50 minutes w/convection oven). Amazing results! The recipe is absolutely the best even with the sad apples.
