“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 (15 oz.) can whole kernel yellow corn, undrained
1 (15 oz.) can cream style yellow corn
1 (8 oz.) carton dairy sour cream
2 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn muffin mix
1/2 cup (1 stick) butter, melted

Mix all together and pour into large, lightly oiled casserole dish.

Bake at 350°F for 55 to 60 minutes.

Hi Jacque,

I would bake it at the last minute. Otherwise the corn bread may not rise as much as it would when you put it in the oven right after it is mixed because the leavener would be activated as soon as the wet ingredients are mixed.

Hi Marion, yep. 4 times all ingredients. And one cup is equivalent to 1 (8 oz.) container, so 4 cups is good.

I have been making this for a couple of years now and it is so easy and sooo good. If you want it a little sweeter add 3/4 tablespoon of sugar. Have shared this recipe with many friends and neighbors because they have loved it when we get together and each bring a dish to the gathering.

Best version I have used is the following: above recipe, but 1 egg, 4 oz. cream cheese instead of sour cream, only 1/2 stick butter, and 2 tablespoons sugar. Everyone loves it! I like the idea of the green chilis and cheddar cheese, but if I tried those, I think I'd eliminate the sugar and add some chopped onion.

Delicious! - But I like the idea of subbing cream cheese for sour cream as Ricky suggested. Do you use 8 oz. (by weight) just like the sour cream? Do you melt/soften the cream cheese first? Thanks for the suggestion!

I also made this for Thanksgiving and the family requested it again for Christmas. I subbed the sour cream with cream cheese... and drained most of the whole corn. mmmmmm yummy stuff.

This recipe is simply scrumptious but I add 2 tablespoons of corn syrup and substitute cream cheese for the sour cream. I also add a bit of honey, therefore there no need for sugar unless you want it to taste sweeter.

Lived in Chelsea, Mi where Jiffy Mix is made.... here's my favorite twist... cream cheese instead of sour cream... also add crumbled bacon... diced shallots or green onions... & we use diced yellow (pickled) pepper rings & I add some diced red pepper for color... always a hit!!!

Love this... I've been making it for a little over 5 years and I make it pretty much the same except everything is doubled and I use 2 packages of cream cheese instead of sour cream... tastes sooo much better.

Always love this, but have just read about cream cheese substitute, so will try. However, I have always added a few pieces of chopped jalapeno (the bottled slices) and a teaspoon or two of the pickling juice from the bottle... only if you like a little spiciness... definitely takes it up a huge notch!

Been making this for decades! I substitute plain yogurt for the sour cream and use only 1/2 stick of butter. It is just as good, but far fewer calories. Can't imagine adding sugar. It's already slightly sweet. Though my sister once accidentally used vanilla yogurt instead of plain and it was like dessert!

We modify this recipe by adding browned bacon, onion, shredded cheese in them mix and sometimes green chilis without the sour cream. Everyone just loves it. It is a special treat when I bake it in the smoker instead of the oven.

I've been making this for years for holidays like Thanksgiving, and it's always a big hit! The kids really love it... but adults too. With that much butter, how can one go wrong! You can pre-make it a day or two ahead, and reheat it when needed (either oven or microwave, seeing how busy the oven is on a holiday cooking other foods!). It also reheats nicely with leftovers!

I make this same casserole only I use plain yogurt instead of sour cream and no eggs. It comes out real good. I just mix it all in one pan. It freezes well.

I love this recipe! I first found this on the side of a Jiffy box 30 plus years ago and it's been in my repertoire since. Mine never called for sour cream, but I have added canned chopped green chilies, or drained basic salsa, and a little shredded cheese on top and/or mixed in with the other ingredients. I like to make this as muffins more often than a single pan. They keep and freeze really well.

I have been making this casserole for years after a woman I took care of had me try it. It does freeze very well and if you let it thaw and then put in microwave. Us girls would use individual one serving ceramic dishes and would take one out of freezer as needed, it is so good!!
