Roquefort cheese, coarsely chopped 1 tbsp. chopped parsley 1 shallot, finely chopped 2 tbsp. wine vinegar 1 tbsp. strong mustard 8 tbsp. oil 3 tbsp. sour cream Lemon juice Salt & pepper Place cheese in bowl. Add parsley, shallot and vinegar. Season and mix very well. Mix in mustard. Add oil in steady stream while mixing constantly with whisk. Stir in sour cream and lemon juice to taste. Correct seasoning and set aside until used. 1 Serving: 72 calories, 0 g carbohydrates, 9 g protein, 8 g fat, 9 g fiber. |
