TUNA VEGETABLE SALAD | |
1/2 c. salad oil 2 tbsp. vinegar 2 tbsp. lemon juice 2 tsp. sugar 1 tsp. paprika 1 tsp. prepared mustard 1/2 tsp. salt 1 med. head lettuce, torn in bite-size pieces 1 (16 oz.) can cut or whole green beans, drained 2 c. cooked, peeled & diced potatoes 1 (7 oz.) can tuna, drained & flaked 2 tomatoes, peeled & sliced 2 hard boiled eggs, cut into wedges In a screw top jar, combine salad oil, vinegar, lemon juice, sugar, paprika, prepared mustard and salt. Cover and shake until well blended. Chill. Just before serving, arrange lettuce in a salad bowl. Shake dressing and drizzle a few tablespoons over lettuce. Arrange beans, potatoes, tuna and tomatoes on top of lettuce. Garnish with egg wedges and season with salt and pepper. Pour remaining dressing over salad. |
