PEACH JAM 
2 1/2 - 3 lbs. peaches (10-12)
1 (1 3/4 oz.) pkg. powdered fruit pectin
2 tsp. lemon juice
5 1/2 c. sugar

Peel, pit and coarsely grind peaches; measure 4 cups. In an 8 to 10 quart kettle combine ground peaches, pectin and lemon juice. Bring to a full rolling boil (a boil that cannot be stirred down), stirring constantly. Stir in sugar. Return to a full rolling boil. Boil hard, uncovered, for 1 minute; stir constantly. Remove from heat; quickly skim off foam with a metal spoon.
