GLAZED BANANA LOAF CAKE 
2 cups all-purpose flour
3/4 tsp. salt
3/4 tsp. baking powder
3/4 tsp. cinnamon
1/4 tsp. baking soda
3/4 cup. sugar
2 tbsp. butter, melted
3/4 cup. light buttermilk
1/2 cup. mashed bananas
3 egg whites
1/2 cup dried fruit bits

Preheat oven to 350°F.

Coat a 8 1/2-inch x 4 1/2-inch loaf pan with cooking spray. In bowl, combine flour, salt, baking powder, cinnamon, baking soda. Reserve.

In bowl, with mixer on medium-high speed, beat sugar and butter until blended. Add buttermilk and mashed banana, beat until blended. On low speed, beat in flour mix until just combined.

In clean bowl with clean beaters, on high speed, beat egg whites until soft peaks form. Gently fold egg whites and fruit bits into banana mix. Transfer to pan.

Bake 1 hour and 10 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes.

Glaze:

1/2 cup confectioners' sugar
1 tsp vanilla extract
2-3 tsp. water

In bowl, combine confectioners' sugar, vanilla extract, and 2-3 teaspoons water until smooth. Drizzle over cooled cake.

Great with coffee and it's lo-fat, lo-calories.
