CHOCOLATE MINI CHEESECAKE 
2 (8 oz.) pkgs. cream cheese
2/3 c. sugar
1 tbsp. flour
2 eggs
2 tbsp. Kahlua
1 c. miniature chocolate chips
12 Oreos (see note)

Preheat oven to 325 degrees.

Beat cream cheese, sugar, and flour. Add eggs, one at a time, mixing well after each addition. Blend in liquor. Melt 1/2 cup chocolate chips; add to cream cheese mixture until blended. Stir in remaining chips. Place 1 cookie in bottom of 12 paper lined muffin cups. Fill to top with cream cheese mixture. Bake 25 to 30 minutes or until set. Cool before removing from pan. Chill. You can garnish with Cool Whip, shaved chocolate, etc.

Note: Instead of using whole cookies, I crushed some Oreos and added little melted butter and patted mixture in bottom of lined muffin cups.
