BLANCMANGE 
2 1/2 c. milk
5 tbsp. cornstarch
1/4 c. sugar
1/8 tsp. salt
1 tsp. vanilla

Scald 2 cups of the milk on top of double boiler. Combine cornstarch, sugar, and salt; mix with remaining 1/2 cup milk to a smooth paste. Gradually stir mixture into scalded milk.

Cook, stirring constantly over boiling water until smooth and thickened. Cover and cook 10 minutes longer, stir frequently. Add vanilla and pour into custard cups. Chill. Yield: 4-5 servings.
