LEBANESE FLAT BREAD
 

5 lbs. flour
5 tbsp. sugar (heaping)
5 tsp. salt (heaping)
2 pkgs. dry yeast
1/4 c. oil
6 c. warm water

Dissolve yeast in 3/4 cup warm water for 10 minutes. Add oil to yeast before adding to flour. (Add 1/4 teaspoon sugar to yeast, will help dissolve faster.)

In large bowl, mix flour, sugar, and salt. Pour yeast and some of the warm water, then add small amount of water at a time. Knead until smooth. Cover and let rise 2 hours. Punch down. On floured board, form balls about 4 inches in diameter.

Cover and let rise 1/2 hour longer. Roll out dough to 1/4 inch thick. Bake in hot oven (450 degrees) about 10 minutes (until undersides are light brown). Put bread under broiler about 1/2 minute to lightly brown on top. Freeze bread - warm in foil.
