CHICKEN PIZZAOLLI (PIZZA STYLE) 
2 chicken breasts, skinned and cut into quarters
4 white potatoes (sweet potatoes may be added), cut into chunks
1 (16 oz.) can peas with juice
1 med. onion, sliced
1/2 c. grated Parmesan cheese
1 tbsp. oregano
1/4 c. olive oil or salad oil (approximately)
Salt and pepper
2 (4 oz.) cans pieces mushrooms with juice
3 lg. pods garlic, chopped
1/4 c. chopped parsley
8 oz. can tomatoes, chopped

Using large casserole dish, place cut up chicken in one corner; potatoes in one group and peas in another. Spread onion, garlic and parsley over all; add salt and pepper to taste; add grated cheese, oregano, and tomatoes over all, then sprinkle olive oil. Add enough water to just about even with the casserole. Bake in 350 degree oven, basting several times until chicken is cooked and top nicely browned. Makes 4-5 good servings.
