CREAM OF TURKEY SOUP 
1/2 c. chopped onion
1/3 c. softened butter
3 tbsp. all purpose flour
3/4 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
1 1/2 c. turkey broth
1/2 c. cooked cubed turkey
2 tbsp. chopped parsley

Saute onion in butter until tender. Blend in flour, salt and pepper. Stir in milk and broth gradually. Cook over medium flame, stirring constantly, until thickened. Add turkey; simmer 5 minutes, stirring occasionally. Garnish with parsley. Yield: 4 to 6 servings.
