PINEAPPLE UPSIDE-DOWN CAKE 
1 box lemon cake mix
1 small can sliced pineapple
1 stick butter
2 eggs
1 c. water
1/2 c. sugar
1/2 c. coconut (optional)
1/2 c. chopped pecans (optional)

Melt butter in saucepan. Add sugar, pecans and coconut; also, half the juice of the pineapple. Place pineapple slices in square baking dish or baking pan. Pour mixture of butter, pecans and coconut over slices of pineapple. Mix lemon flavor cake mix, water, eggs and rest of pineapple juice. Beat for 3 to 4 minutes. Pour batter over pineapple slices and other mixture in baking dish.

Bake at 350°F for 45 minutes.
