SPINACH SALAD 
1/2 lb. washed spinach, broken slightly
6-8 slices bacon, diced
1/4 c. red wine vinegar
3-4 tbsp. soy sauce
1/4 c. brown sugar
6-8 green olives
1 sm. onion, chopped
6-8 fresh mushrooms
1 cooked egg
Approx. 1/4 c. liquid from olives
Salt & pepper to taste
Garlic salt, if desired

Saute bacon. Remove from grease. Saute onion. Add vinegar, sugar and soy sauce. Arrange spinach on salad plates. Sprinkle with chopped egg, sliced mushrooms, sliced green olives, bacon bits and season to taste. Add warm dressing just before serving.
