2 lbs. flank steak (brisket can be used instead)
1/3 c. olive oil
1 lg. chopped onion
1 lg. chopped green pepper
2 minced garlic cloves
1 sm. can tomato sauce
1 tsp. salt
1 laurel leaf
1/2 c. cooking wine
1 lg. jar red pimentos (drained)

Cook flank steak for 20 minutes in a pressure cooker or in a saucepan until the meat is tender. Save this broth - it is great when you are making soup! Shred the beef in "strings" while it is warm.

Saute onion, green pepper and garlic in oil until the mixture looks translucent. Add meat, tomato sauce, wine, spices and stir well. Cook for 20 minutes, stirring occasionally so it will not stick. Add pimentos before serving. Serves 6-8 people.
