RED POTATO SALAD WITH DIJON MUSTARD
 

2 lbs. red potatoes
1 c. sliced celery
1/3 c. sliced scallions

DRESSING:

1/3 c. salad oil
1/4 c. red wine vinegar (a little less if you want)
2 tbsp. Dijon mustard
1 tsp. marjoram
1 minced clove garlic

Boil 2 pounds red potatoes, cut up and chill. Add 1 cup sliced celery and 1/3 cup sliced scallions. Separately mix the dressing ingredients and toss mixture with potatoes, celery and scallions.
