BAKED FLOUNDER WITH CHEESE 
2 lb. flounder filets
2 tbsp. fresh lemon juice
1/4 c. light mayonnaise
2 tbsp. finely chopped onion
1/4 c. fresh Parmesan cheese
1/4 c. butter
1/2 tsp. seasoned salt

Place flounder on greased foil on cookie sheet. Turn up edges all around so juices do not run over. Pour lemon juice over fish. Combine rest of ingredients, set aside. Bake fish for 6 to 8 minutes in 450 degree oven until fish flakes with a fork. Remove from oven. Gently spread cheese mixture on top of fish. Put back in oven and broil just until cheese has melted and topping is golden brown.

Makes 5-6 servings.

Very good!!! I added a pinch of Old Bay and crushed red pepper flakes and cut back on the seasoned salt- it was great. It would also be good with crab meat mixed in with the cheese spread.

Great recipe. Used green onion instead of white, and doubled the cheese, also added a few tablespoons of old bay. End result was a little salty, would skip the seasoned salt and just use old bat next time. Actually used it on flounder and grouper worked perfect.

I've made this with various white fish, and it's always a hit. We also tried making a little extra of the Cheese topping, and used it as a seasoning for Baked Potatoes. Works great.

I just made this recipe and it was great. However I added fresh garlic and parsley to the mayonnaise and parmesan mix. I feel that if I did not, it would have been missing something. I served this dish with garlic mash, and veggies.

I used sour cream instead of mayo because I do not like to use mayo in a sauce.. no onion, lemon pepper and garlic salt instead of seasoning salt.. supper yum plus my picky eater wolfed it down and asked for more.
