PEANUT BUTTER AND CHOCOLATE
BROWNIES
 
1 c. peanut butter
1 3/4 c. sugar
3 eggs
1/2 c. butter heated to room temperature
1 tsp. vanilla
1/4 c. cocoa
1/2 c. flour

Preheat oven to 350 degrees. Grease 8 or 9 inch square pan. In a small bowl blend together peanut butter, 3/4 cup sugar and 1 egg. Press mix evenly in bottom of greased baking pan. In medium bowl beat together butter, remaining 1 cup sugar, remaining 2 eggs and vanilla until fluffy.

Add cocoa and flour beat until thoroughly blended. Spread evenly over peanut butter mixture in pan. Bake 35 to 40 minutes. Do not overbake! Cool in pan. Cut cooled brownies into bars. Makes 20 (2 x 1 1/2 inch) brownies.

This is a delicious recipe. The only thing that I didn't like was that the peanut butter mixture was fully cooked, while the brownie mixture was still undercooked. I even cooked beyond the full time listed in the recipe. Not sure what I could have done differently. I followed the recipe closely!

I made a lighter version of this using egg substitute and a Splenda/sugar blend and it is awesome!!

These brownies are awesome and so easy to make. I've made them several times and they are always delicious. Last night I accidentally mixed the butter with the peanut butter mix and didn't have any more butter or PB to start over so I just mixed it all together and hoped for the best. They were still wonderful although the favors weren't quite as distinctive.

Definitely enjoyed this recipe. I have made it twice now. The first time, it turned out very well and was delicious! (Kind of tasted like a No-Bake cookie in brownie form. :D) The second time I baked it, I must have done something wrong... Not sure what. It was still just as delicious, but the two layers didn't hold together. The top popped off and the bottom stayed in the pan. I had to dig it out... Will definitely try to make it again and hopefully round three will be another round one. :D
