LAYER NO. 1: 1/2 c. butter 1/4 c. sugar 4 tbsp. cocoa 1 egg 2 c. crushed graham cracker crumbs 1 c. shredded coconut 1/2 c. chopped English walnuts Stir butter, sugar, cocoa, and egg in double boiler over boiling water until it looks like a custard. Remove and add cracker crumbs, coconut, and walnuts. Blend well and press in ungreased pan. LAYER NO. 2: 1/4 c. butter (or more) 2 c. powdered sugar 2 tbsp. vanilla instant pudding mix Beat thoroughly in mixer and spread on top of first layer. May be colored pink or green. LAYER NO. 3: 1 square (6 oz.) semi-sweet chocolate 2 tbsp. butter Melt in double boiler over hot water and pour over top. Put in refrigerator, cut in squares. This may be frozen. |
