LONDON SMOG BARS 
LAYER NO. 1:
1/2 c. butter
1/4 c. sugar
4 tbsp. cocoa
1 egg
2 c. crushed graham cracker crumbs
1 c. shredded coconut
1/2 c. chopped English walnuts

Stir butter, sugar, cocoa, and egg in double boiler over boiling water until it looks like a custard. Remove and add cracker crumbs, coconut, and walnuts. Blend well and press in ungreased pan.

LAYER NO. 2:
1/4 c. butter (or more)
2 c. powdered sugar
2 tbsp. vanilla instant pudding mix

Beat thoroughly in mixer and spread on top of first layer. May be colored pink or green.

LAYER NO. 3:
1 square (6 oz.) semi-sweet chocolate
2 tbsp. butter

Melt in double boiler over hot water and pour over top. Put in refrigerator, cut in squares. This may be frozen.

Not bad, but would be better if the vanilla pudding mix were changed for custard powder instead. The best bars have a filling with a texture almost like high quality fudge, and they are so sweet they almost make your teeth hurt. My mother has been making these since we lived in England (late '40's-early '50's) under the name "Miracle Bars".

This bar cookie has been a traditional Christmas cookie in my family for some time (since the 50's) - still being made today by myself and my daughter. I bring these to holiday gatherings as well - quite a hit and requests for recipe never fails. The second layer with vanilla pudding I use 1/2 c. butter [1 cube] and a little more powdered sugar - making the middle layer very rich. I also use pecans - as walnuts tend to have a greater scale of people who are allergic.
