STICKLES (PICKLES)
 
Slice large (not yellow) cucumbers lengthwise. Remove seeds. Cut into strips 1/4 inch wide. Soak overnight in 1 cup powdered lime to 1 gallon of water. Wash thoroughly and soak for 3 hours in fresh, cold water. Make a syrup:

1 c. cider vinegar
5 c. sugar
1 tsp. celery seed

Heat and pour over stickles. Let stand overnight. The following morning boil in syrup for 30 minutes. Seal in hot, sterilized jars.

I recently visited Texas and I never heard of Stickles so I had to buy a jar, I have no idea how to use them. What do you do with Stickles?

Use these in any dish you like but they are great for potato salad and on hamburgers for a change of pace. For hamburgers, offset sweet with some mustard. For color, you can add some green dye to make them more eye appealing. Also good in chicken or tuna salad.

My Mother made these all the time in the 60s & 70s. They are great eaten with a sandwich or hamburger. They are very easy to make - good for a 1st time canner.
