ITALIAN SAUSAGE SOUP 
1 lb. Italian sausage
4 slices bacon, crumble to garnish servings
2 c. chopped onion
6 c. beef stock
1 tsp. salt
1/2 tsp. garlic salt
1 tsp. oregano, crushed
4 potatoes, diced
1 (10 oz.) pkg. frozen chopped spinach

Cook bacon and set aside. Brown and crumble sausage. Drain well. Brown onions. Simmer above with stock and spices for 30 minutes. Add potatoes and spinach. Simmer 20 minutes. Serves 8 to 10.
