SLICED CUCUMBERS IN VINEGAR 
2 lg. firm cucumbers
3/4 c. vinegar (apple cider)
1/2 to 3/4 c. sugar
1/2 tsp. pepper
1/2 to 1 tsp. salt

Slice cucumbers thinly - you may peel if desired. Mix last 4 ingredients until sugar is dissolved. Pour over cucumbers. Cover and refrigerate at least 2 hours. Drain and serve in a clear glass jar or bowl. You may also use sliced green, red, and yellow bell peppers in place of cucumbers.

The tradition in our family is half cukes and half sliced onions. Plus we mix sugar 50/50 (that is 1 cup vinegar and 1 cup sugar) into the vinegar for a sweet/sour approach. We always let ours sit in the "frige for at least one day before enjoying.... (Been eating them this way for over 70 years myself.)
