CARROT - BANANA BREAD 
1/2 c. butter
1 c. brown sugar
2 eggs
1 c. mashed bananas
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
1 c. grated carrots
1/2 c. chopped nuts

In large bowl, cream butter with sugar until light and fluffy. Beat in eggs. Mash bananas in small bowl. Mix flour, baking soda, baking powder, cinnamon and salt. Blend in flour mixture alternately with bananas. Stir in carrots and nuts.

Turn into greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 50-60 minutes. Cool 10 minutes. Yields 1 loaf.

Variation: 1 cup chocolate chips may be added.
