Everytime my husband and I go to the outer banks in North Carolina, we get Hatteras clam chowder. I have searched everywhere for a recipe, and couldn't find it. So I guessed, and guessed right. Very low fat too.

1 large onion chopped
4 cloves garlic minced
1 celery heart (inner pale green part) chopped, incl leaves
20 baby carrots sliced thin
2 medium potatoes cubed
4 tbls olive oil
7 slices soy bacon cooked and crumbled
32 oz vegatable broth
2 8 oz bottles of clam juice
4 cans 6.5 oz chopped clams
1 tbls oregano
freshly ground pepper

Heat olive oil in soup pot. Saute garlic, onions, celery and carrots until onions become clear.

Add potatoes, and stir in vegetable broth, clam juice, clams and soy bacon.

Add oregano and freshly ground pepper.

Simmer for an hour until vegetables are soft.
