CANDIED SWEET POTATOES OR YAMS 
2 or 3 sweet potatoes or yams, peeled, cut in half or quartered
1/2 to 1 stick butter
1/2 to 3/4 c. brown sugar

Wash and peel sweet potatoes or yams; cut in half or quarters. Rinse and pat dry with a paper towel. Place in a electric fry pan with melted butter. Cook at low temperature turning during cooking until partially done. Add brown sugar and continue cooking, basting several times with the brown sugar glaze. It will probably take about 1/2 hour to cook until done.

This is as close as I have ever seen to the recipe I grew up with. It came from a Norwegian Grandmother who arrived in the U.S. It does take a bit of time, I would not substitute margarine, but I do like to add vanilla. Very excellent, thank you. This does not dissapoint any palate!
