2 or 3 sweet potatoes or yams, peeled, cut in half or quartered 1/2 to 1 stick butter 1/2 to 3/4 c. brown sugar Wash and peel sweet potatoes or yams; cut in half or quarters. Rinse and pat dry with a paper towel. Place in a electric fry pan with melted butter. Cook at low temperature turning during cooking until partially done. Add brown sugar and continue cooking, basting several times with the brown sugar glaze. It will probably take about 1/2 hour to cook until done. |
