CAJUN GOULASH 
2 c. long grain white rice (makes 4 c. cooked)
2 lbs. Eckrich Lite Link Sausage, sliced into 1/2 inch thick rounds
1 med. onion, chopped
8 to 10 fresh mushrooms, sliced
1 (16 oz.) can kidney beans
1 (18 oz.) jar Cajun flavored barbecue sauce

Cook rice according to package directions. While rice is cooking, saute sausage, onion and mushrooms in electric skillet (sprayed with Pam) at 250 degrees until onion is transparent.

When rice is cooked, add to sausage mixture, then add kidney beans. Stir items together as you add barbecue sauce. Reduce heat to 200 degrees and heat through, stirring occasionally, approximately 10 minutes. Serves 6.
