PINTO BEAN PIE 
2 c. pinto beans, cooked
2 c. sugar
2 tbsp. flour
1/2 c. melted butter
4 eggs
1 tsp. nutmeg
1 tsp. vanilla
2 (8 inch) unbaked pie shells

Put beans in a large bowl and mash until smooth then stir in sugar, flour and butter. Next, beat the eggs in, 1 at a time, then add nutmeg and vanilla until well blended. Pour into pie shells and bake at 350 degrees for approximately 35 minutes or until brown and tests done. Serve warm especially if topped with whipped cream or dessert topping.
