PEAR RELISH | |
2 qt. washed, peeled & ground pears 3 lb. onions, peeled & ground 7 mixed red & green bell peppers, seeded & ground 1 hot pepper, seeded & ground 2 tbsp. salt 1 tbsp. turmeric 2 c. sugar 1/2 tbsp. celery seed 3 tbsp. prepared mustard 5 tbsp. flour 1 c. vinegar plus 2 c. vinegar Mix pears, onions and peppers in porcelain pan and set aside. Mix salt, turmeric, sugar, celery seed, mustard, flour and 1 cup vinegar in large boiling pan. Cook until thick, stirring while cooking. Add 2 cups vinegar and mix well. Pour this mixture over the pears and vegetables, bring to a boil and boil for 15 minutes, stirring to prevent sticking. Seal in jars that have been boiled and sterilized. Place in hot bath cooker with boiling water, and boil for 10 minutes. Remove and check seals. Let relish mellow 4-6 weeks before serving with peas, beans, roast meats or ham. Makes about 11 pints. |
