SPINACH - CHEESE CREPES 
1 pkg. (10 oz.) frozen chopped spinach
1 c. creamed cottage cheese
5 slices bacon, cooked, crumbled
2 tbsp. minced onion
1/2 tsp. salt
1/4 tsp. pepper
8 slices Mozzarella cheese
8 hot crepes

1. Cook spinach according to package directions; drain thoroughly. Fold cottage cheese, bacon, onion, salt and pepper into spinach. Heat thoroughly. Heat oven to 325 degrees.

2. Place Mozzarella cheese slice on each crepe. Spoon spinach mixture onto center of crepes; roll.

3. Bake until cheese melts, about 5 minutes. Makes 4 main dish servings (2 crepes each).
