FINNISH PANCAKE (SUOMALAINEN
PANNUKAKKU)

4 eggs
1/4 c. honey
1 tsp. salt
2 1/2 c. milk
1 c. flour
4 tbsp. butter

Put a heavy frying pan (at least 10 1/2 inch wide and 3 inches deep) into a 425 degree oven for 10 minutes.

Meanwhile, in a bowl, beat together eggs, honey, salt and milk. Add flour. Beat until blended and smooth. Remove pan from oven, put in butter and as soon as it melts. Pour butter into the hot pan. Bake for about 25 minutes or until a knife inserted in the center comes out clean.

Serve immediately. To serve Finnish pancake, cut and serve peaches over each serving. Drizzle honey over the peaches.
