ZUCCHINI (MOCK) APPLE PIE 
8 c. zucchini, peeled, sliced & seeded
2/3 c. lemon juice
1 c. sugar
1/4 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
4 c. flour
2 c. sugar
3 sticks butter
1/2 tsp. salt

Bring to boil zucchini, lemon juice, sugar, nutmeg, cinnamon and salt. Boil until tender. Mix remaining ingredients. Stir 2/3 cup into zucchini mixture. Divide remaining in half. Press half into 9 x 13-inch pan, spread with filling and top with other half. Bake at 350 degrees for 40 minutes.

This is a great tasting dessert. Makes a huge dish. I made it for a church supper and didn't have any to bring home. They loved it and did not believe it was made with zucchini.

I just served this last weekend at our annual trail ride and received rave reviews on the wonderful 'Apple' pie! This is a fantastic way to use those zucchinis that look like Pop Eye's fore arms. I also decorated the pie crust with an egg wash and and sprinkle of raw sugar. This is going to be one of my favorite recipes. Kudos to the cook who originally executed this recipe! Yum! Goes exceptionally well with Breyers French Vanilla ice cream.
