3 beaten eggs 1 1/2 c. sugar 1/2 c. butter, melted 8 unbaked tart shells or one 9" unbaked pie shell 4 tsp. lemon juice 1 tsp. vanilla 3 (3 1/2 oz.) can (1 1/3 c.) flaked coconut
Combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut. Pour into unbaked tart shells.
Bake in a 350 degree oven for 40 minutes or until a knife inserted just off center comes out clean. Cool. Makes enough filling for 8 (3 1/4 inch) tarts (or one 9 inch pie).
