CHRISTMAS CHEER OR WHISKEY
COOKIES
 
1 cup (2 sticks) butter, softened
1/2 cup brown sugar
3 eggs
3 cups all-purpose flour
1 tsp. baking soda
1/2 cup whiskey
1 cup chopped walnuts or slivered almonds
1 cup raisins or dates or glazed fruit

Cream together butter and sugar; add eggs and beat until mixed. Stir in flour mixed with baking soda. When flour is incorporated, add remaining ingredients. Mix as little as possible to avoid tough cookies.

Drop onto parchment sheets and bake in a preheated 350°F degree oven until edges are golden. Remove and cool on wire racks. Store in airtight container.

Note: Cookies may be made with or without nuts, raisins, Craisins, currants, etc. Pistachios and Macadamia nuts are a nice addition. Amaretto, Strega (Galliano) or Italian Walnut flavor liqueur may be substituted for the whiskey. There is no need for extracts when using alcohol as flavorings. Don't worry about the alcohol unless you have an allergy; most of it evaporates in the baking and during storage. Most flavoring extracts also contain alcohol.

Since I'm allergic to nuts, I subtract the nuts and use 2 cups wheat flour & 1 cup white flour to thicken the dough a little. I also use extra fruit since I'm not adding the nuts. We like golden raisins, candied orange peel, Craisins, and dates. My grandma likes to add a maraschino cherry on the top of each cookie to make them more festive-looking, so I do that too. These are good cookies!

Cookie tasted more like a scone. Directions were very vague on how long to cook. I went with twelve minutes and they seemed to be done. Unfortunately this is a cookie I will not be making again.
