VEGETARIAN'S SPECIAL K LOAF 
5 cups Special K cereal
5 eggs, beaten
1 cup chopped walnuts
1 large carton cottage cheese
2 tbsp. McKay chicken seasoning or onion soup mix
1 large onion, chopped
1/4 stick butter
Chopped celery, if desired

Sauté onion in butter. Mix all ingredients together and turn into oiled loaf pan. Bake at 350°F for 45 minutes. This freezes well. To serve after freezing, reheat in oven for 20 minutes.

This was delicious. I loved it. The family loved it. I'll be making this again. I looked at other recipes, this one had the fewest, easiest to get ingredients, which is why I chose this one. I used regular chicken seasoning, and made the walnuts half chopped, half meal. Seriously, this was really yummy.

This was so good! I divided it into two loaf pans and it came out a bit gooey. Next time I'm going to try cooking it in a larger pan so it will firm up a bit.

P.S. I use 1 envelope of Lipton's Onion Soup mix instead of McKay's -- it gives the loaf a better flavor in my opinion.

I have used this basic recipe for many years. Our house was vegetarian while the children were at home and this was great. now I have grown up children who love turkey (go figure!!) I now make this for me and I add special add-in ingredients for holidays. I add apples and pears to the onion sauté. I also add A-1 sauce to darken and add some tang. I have added more nuts and even a little maple syrup... Holiday delicious.

I grew up on Special K loaf. My family has cooked this recipe over 60 years and we loved it as kids. My mother was the BEST vegetarian cook EVER. And she passed on her secrets to her children and grand children. This recipe is very good and simple. TWO GIANT thumbs up!!

This is the traditional Sabbath dinner staple my family prepared for years. Now that I have my own family, I still make it, though my kids were raised eating meat. They LOVE the crunchy crust, so I make it in a well greased muffin tin rather than a casserole. With a few extra walnuts finely chopped, sprinkled over the top. My favorite recipe from childhood.

I'd like to try this with cornflakes. I use cornflakes as my preferred binder in regular meatloaf and it's very tasty if you have them around. I love vegetarian food and loaves as well so incorporate them often so will def try this one, looks great. I've made a walnut loaf that had cheddar cheese once it was delicious. This is super high in protein and diet friendly.

I was confused as to whether or not to mix the onion soup mix according to instructions on packet before adding to other ingredients, or do I add it dry from from the packet. I made it according to onion mix instructing, but it was a little to moist. Also, does it really need 5 eggs? It did taste very good tho!

It was great! I took it for church potluck it was all gone.
I used Chex since I didn't had Special K and a little bit of Grapenut cereal for better consistency. I used Mckays and Seasoned it with Onion powder, Garlic Powder, Cumin Powder and Soy Sauce Kikomann was Superb!! ;0

Instead of using a commercial seasoning, I used a lot of onions and sautéed with dried mushrooms, seasoned with sea salt, garlic powder and a sprinkle of dried cilantro.

I grew up on this stuff. Even though I'm not vegetarian, I still love it. To cut costs a little, you can use generic rice krispies instead of actual Special K.
