“PEANUT BUTTER - IRISH POTATO CANDY” IS IN:

PEANUT BUTTER - IRISH POTATO
CANDY
 
2 (1 lb. ea.) boxes confectioners' sugar, sifted
1/2 cup hot mashed potatoes, drained
1 small jar crunchy peanut butter

Mix sifted sugar into potatoes a little at a time by hand. (Don't panic when potatoes liquefy as the first sugar is added. This is what it's supposed to do. Just keep adding sugar until it is of pastry consistency).

Sprinkle wax paper with additional confectioners' sugar. Take baseball-sized ball of mixture and roll out like pastry. Spread with peanut butter and roll like a jelly roll. Wrap rolls in plastic wrap; chill and slice.

Makes 2 rolls.

My mother made this every Christmas when I was growing up in the 50's. She passed away in January of this year at age 94. It warms my heart when I remember times in the kitchen with her when she made this delicious candy.. Thank you

My Gram use to make this candy with a twist. Instead of using crunchy peanutbutter she would use creamy. After cooling and slicing the candy she would dip it in chocolate and roll it in crushed peanuts. SO YUMMY!!
